PURPOSE:To improve the tissue of fish, shellfish, vegetable and fruits, and to promote the ripening of liquor, etc., by irradiating the food with high-frequency electromagnetic wave emitted from an electrode mat covered with an insulation material. CONSTITUTION:The quality of a food can be improved by placing the food on a special electrode mat 19, and irradiating with electromagnetic wave induced to the mat by a high-voltage high-frequency electromagnetic wave generator 8. The irradiation is continued for 30-60min. For example, a raw fish is placed on the electrode mat and irrdiated for 30min with the wave of frequency 2,000 kHz at an output voltage of 1,500V. The deterioration of the protein of the meat can be reduced by >=50% in the irradiated fish when compared with the untreated fish after 24hr. |
