PURPOSE:To prepare fine-grained TOFU (bean curd) which can be cooked without collapse, by adding a coagulant having high rate of coagulation to soybean milk, mixing the mixture in a vessel, and heating to effect the coagulation. CONSTITUTION:Soybean milk boiled by conventional method is cooled to about 20 deg.C, and charged together with a coagulant having high rate of coagulation such as calcium sulfate, magnesium chloride, etc. in a sales vessel, and mixed in the vessel. The vessel is sealed and heated at 80 deg.C for 50min in a water bath, etc. to coagulate the content. |
