PURPOSE:To readily control temperature, etc., in a fermenter capable of being miniaturized and safely, sanitarily and continuously obtain a fermentation product, by fermenting a liquid food using a highly porous granular foam glass containing immobilized microorganisms, e.g. lactic acid bacteria, etc. CONSTITUTION:Microorganisms consisting of lactic acid bacteria and yeasts are inoculated and cultivated in a highly porous granular foam glass, consisting of soda-lime glass, etc., and having 0.5-50.0 central pore diameter as well as 1.0-5.0l/g pore volume and immobilized on the surface and interior of the foam glass and afford the aimed highly porous granular foam glass 1 containing the immobilized microorganisms. A liquid food 4, e.g. milk, dairy product, pressed juice of fruit or vegetable or cereal extract, etc., is then passed from a raw material tank 3 through a reaction column 2 filled with the highly porous granular foam glass 1 containing the above-mentioned immobilized microorganisms by a pump 5 and fermented to provide a fermentation product, which is subsequently received in a fermentation product tank 6. |
