Low-cariogenic sweeteners

The sweetener prepared by adding palatinose to sucrose is a low-cariogenic sweetener since palatinose is not only low-cariogenic itself but also inhibits the formation of insoluble glucan from sucrose in the oral cavity. Since the sweetener is virtually identical to sucrose with regard to sweetening power, dissolution capacity in the mouth, palatability etc., and moreover low-cariogenic when used in foodstuffs, it is suitable as a sweetener. Since, furthermore, the sweetener is usually in crystal or powder form, it is easy to handle.
