A machine for stripping the skin from the breast section of a carcass of meat, partic. pork. The machine is of the type in which a vertical, powder-driven, rotary drum is pressed against the breast section of a suspended carcass. A stripping blade is fixed close and parallel to the surface of the drum. The machine now has a mechanism to form and grip a vertical strip of skin to drag the skin/flesh interface across the stripping blade. The mechanism comprises a slitting knife which makes a vertical slit right down the breast section as the drum is pressed against the carcass. The skin along the edge of this slit is clamped by a gripper built into the drum which is then rotated to move the strip of skin over the edge of the stripping blade. The stripping action is automatic and eliminates hard, manual effort. The action is cleaner, less wasteful and much faster than that of previous machines.
