<p>The oven consists of the cylindrical shell (1) with domed ends forming a vertical enclosure. A smoke outlet (9) is fitted with a control damper. The gas burner (5) is located in the centre of the base (3) and has an air inlet in the centre and further inlets (7) around the periphery. A short fire tube (4) surrounds the gas burner and items to be cooked are suspended from the hanging rail (10) outside the central core of the flame. Fats and juices produced during the cooking drain through the bottom outlets (11).</p> |
