The steam-release and relief valve has an axially movable valve element (27) which is mounted in a valve housing (4) and is pressed onto an annular valve seat (11) of the valve housing (4) by a spring (29). To open the valve, the valve element (27) is raised from the valve seat (11), counter to the pressure of the spring (29), by means of a rotary handle (18) or by an excess pressure in the pressure vessel. The valve element (27) has a coaxial cylindrical hole (31) which is open towards the interior (3) of the pressure vessel and, at its other end, opens via a through opening (32) into a steam release channel (16) connected to a steam release branch (14). A ball (37) retained by a ring (38) is arranged in the hole (31) with the ability to move freely in the axial direction. When the pressure vessel is put into operation with the lid and the valve closed, the air in the pressure vessel can initially escape via the hole (31), the through opening (32) and the steam release channel (16) into the open due to the steam pressure which builds up when heated. When the steam pressure rises, the ball (37) is pressed against the through opening (32) counter to the force of gravity, thus closing this passage. It is thereby possible to achieve automatic venting of the interior of the pressure vessel before the actual boiling process. <IMAGE>
