发明名称 PREPARATION OF SALTED HERRING ROE
摘要 PURPOSE:To carry out the bleaching, sterilizing and insecticidal treatment in a short time and prepare a salted herring roe without residual hydrogen peroxide, by treating a herring roe with an enzyme capable of decomposing hydrogen peroxide, e.g. catalase, treating the roe with a solution of hydrogen peroxide, and salting the treated roe. CONSTITUTION:A herring roe is dipped in a solution of an enzyme capable of decomposing hydrogen peroxide, e.g. catalase, for 2-24hr to apply the enzyme capable of decomposing the hydrogen peroxide to the surface of the roe and spaces between the eggs in the roe. The treated herring roe is then dipped in an aqueous solution of hydrogen peroxide in a concentration of 1-3% for 5sec- 3hr, and then allowed to stand in the air to carry out the bleaching, sterilizing and insecticidal treatment of the herring roe by the nascent oxygen generated by the enzymic decomposition of the hydrogen peroxide. The herring roe is then salted by the conventional method.
