A versatile double baking oven, especially for preparing flambéed flans, pizzas and the like is equipped in such a way that the baking chamber is composed of a cooking surface which is not as long as the heating system and of a removable lid which can pivot between an upper position, in which it fully closes off the baking chamber, and a lower position in which it defines, together with the cooking surface, a limited open space through which the flames or the hot air pass. The invention is especially well suited for ovens and grilling devices for communities, restaurants, and also for relatively small domestic devices.
