<p>PURPOSE:To fresh vegetable is dipped in a food oil that is heated to a specific temperature to form a layer of food oil on the surface of the vegetable, then frozen, whereby the fresh vegetable is stored for a long period of time without deterioration in freshness. CONSTITUTION:Fresh vegetable such as Chinese cabbage or radish, which is taken apart into each leaf or cut into round slices, is dipped in a food oil of over 150 deg.C for about 10sec, then the food oil is drained and the resultant vegetable is stored in a refrigerator kept below 0 deg.C.</p> |
