In a mechanical filleting method for decapitated fish, particularly such of approximately circular cross section, a trimming work is necessary for removing defects from possible erroneous cuts. In order to reduce the trimming work, a sequence of cuts is proposed according to the invention which permits more exact guiding and thus also alignment. According to this cut sequence, the cuts are placed in the following sequence, namely: belly filleting cut, rib cut, severing cut to separate the lateral vertebral appendages 28 and/or ribs 29 from the backbone 23, back filleting cut, which is guided from the belly to the vicinity of the fin holders 27 of the dorsal fins 26, pinbone cut and back severing cut on both sides of the dorsal fins 26. The dorsal fins 26 are thereby guided such that their introduction between the back severing knives 6 is secured, so that fillets 32 may be cut which are free from the fins or their remains. <IMAGE> |
