Use of certain natural prods. to prevent foodstuffs from boiling over when heated is claimed. Specified prods. are soya lecithin, egg, palm oil, beeswax, pine resin and natural essences. The soya lecithin should be pure, deoiled lecithin with a neutral taste and aroma. It can be added as drops or in powder, tablet or lump form in an amt. of 0.05-0.1%, opt. together with sugar or salt. Aq. solns. can be obtd. by dissolving the lecithin in tepid water (at least 30 deg.) or by steeping for at least 12 hr. The prods. can be added to milk, milk-based drinks, pasta prods., etc., either during mfr. or in the home. |
