PURPOSE:To obtain a milky, nutritive composition usable for nutrition control for children, aged people, patients after operation, etc. who can not take common meals, capable of being fed to digestive organs simply and stably, by emulsifying a composition with a specific emulsifying agent, and sterilizing the emulsion at high temperature. CONSTITUTION:0.05-3wt% based on total composition of one or more selected from succinic acid monoglyceride, malic acid monoglyceride, and citric acid monoglyceride obtained by esterifying a fatty acid monoglyceride of glycerin and 12-20C fatty acid with succinic acid, malic acid or citric acid are used as an emulsifying agent, a composition comprising protein or its decomposition product, glucide, lipid, vitamin, mineral, and water as main components is emulsified with the emulsifying agent, and the emulsion is sterilized at high temperature after emulsification. |
