<p>1. A method for culturing microorganisms, particularly yeasts, on lactoserum as starting substrate characterized in that, after separating proteins in lactoserum and recovering the other constituents, the culture is carried out on the thus obtained lactic substrate, by using, on one hand, an association of strains, each of which develops specifically on a given substrate present naturally in the medium, or on metabolities formed during the fermentation process, and, on the other hand, specific mutants of a strain so as to create ecological "niches" corresponding to an association of strains pertaining to the same species.</p> |
