PURPOSE:To soysauce soup for boiling fresh fish hard contains Japanese SAKE and a thickener, thus removing fishy smell and showing increased penetration into the fish meat. CONSTITUTION:A thickener and Japanese SAKE separately or in combination are added to a soup for boiling fresh fish that is made from broth, soysauce, sweetenings and other ingredients, further a spice selected from leases or seeds of SHISO (beefsteak plant), leaves or seeds of SANSHO (Japanese pepper), leaves of laurel, peels of citrus and ginger root is added thereto. |
