PURPOSE:To prepare grated yam which can be preserved for a long period without lowering the taste and palatability, by immersing a peeled Chinese yam in chlorine water, grating the yam, and deaerating, heating and cooling the grated yam. CONSTITUTION:A peeled yam is immersed in an about 100ppm chlorine water for about 15min to kill the colon bacilli and other microorganisms attached to the yam, washed with water to remove chlorine, grated with a slicer so as to obtain a specific gravity of about 0.65, deaerated to raise the specific gravity to about 0.85, boiled at about 62 deg.C for about 5min, and cooled immediately for 5min at about 3 deg.C. |
