摘要 A protein conc. for fortification of turbid acidic beverages, such as a citrus-flavored carbonated drink contains 50-95% whey protein conc. and 5-50 % of dry skim milk that had been subjected to high-temp. treatment, or a whey protein conc. alone. The pH of the prepd. beverage is 3.1-3.9. Thus, a beverage was prepd. from sugar, water, citric acid monohydrate, coloring,(Yellow No. 5), preservative (NaOBz), and protein to give a final concn. of 0.25% by wt.; the protein addn. was 10.0 parts Enrpro 50, a com. protein conc.from ultrafiltration of acid whey, and 1.85 parts dry skim milk subjected to high-temp. treatment (roller or drum drying).
