<p>PURPOSE:Alcohol for drinking is combined with fat or oil, protein and saccharide and they are emulsified by adding an emulsifier and a protein dispersing agent and homogenized by means of a homogenizer to produce tasty alcoholic beverage of high stability. CONSTITUTION:When an alcohol beverage is made, for example, 5-15% alcohol for drinking, 1-10% food oil such as corn oil or soybean oil, 0.5-5.0% protein such as casein or powdery soybean protein and 5-30% saccharide such as glucose, fructose or galactose are mixed, then 0.1-1.5% emulsifier such as lecithin, sorbitol fatty acid ester or surcrose fatty acid ester, 0.01-0.15% dispersing agent such as sodium second phosphate or potassium second phosphate and water are added to the above mixture, and they are homogenized with a homogenizer under a pressure of 400-50kg/cm<2>. Thus, a nutritious and tasty alcohol beverage of high stability is produced.</p> |
