Apparatus for curing meat with injection needles which are mounted in a needle holder which can be displaced towards a support for the meat to be cured and in each case penetrate a holding-down device which is displaceably guided in the direction of the needle axes. The holding-down device can be pressed in a resilient manner in the insertion direction against a stop of the needle holder and, in this basic position limited by the stop, tightly encloses the needles in the region of their brine-discharging apertures. A feed pipe, which is connected to the injection needles, for the brine and a return pipe are provided by means of which the flow of brine can be short-circuited in the basic position of the holding-down devices. The holding-down devices form chambers which accommodate the brine-discharging apertures of the needles in the basic position and are connected to the return pipe. This ensures that the flow of brine is not interrupted, so that a circuit to permit the flow of brine is automatically achieved without expensive control devices.
