PURPOSE:To obtain the titled fry containing protein and fats, having good flavor, by grinding beef, especially internal organ, pig skin, etc., as a main raw material, roasting and frying. CONSTITUTION:33wt.% wheat flour is blended with 7wt.% wheat flour startch, 15wt.% beef, 3wt.% de-fatted skin of intestine and 2wt.% ammonia expanding agent into a granular or powdery state to give beef cubes. Then 43wt.% beef cubes are mixed with 15wt.% soybean protein, 7wt.% what flour gluten, 28wt.% wheat flour and 7wt.% bread crumb as SENBEI (Japanese cracker) ingredient, kneaded with 25wt.% water, fed to space between circular, rectangular or elliptic male and female molds, heat-treated under pressure at 200-220 deg.C and made into TEMPURA (Japanese deep-fat fried food). Coating (batter) for TEMPURA is blended with sodium glutamate, stevia, marmiron, garlic, onion powder, white pepper, beef essence, powder red mustard, ground beef, soy sauce, etc. |
