PURPOSE:To prepare powdery soup for instant food, having stable qualities, without emulsifying the liquid oil and fat, by mixing irregularly-shaped porous sugar particles with liquid oil and fat and various raw materials for powdery soup. CONSTITUTION:Powder of sugar (e.g. glucose, dextrin, etc) is moistened with a proper amount of water, and heat-treated under dry condition at the crystallization temperature of the sugar to obtain irregularly-shaped porous particles. The particles are mixed with a liquid oil and fat (e.g. soybean oil, coconut oil, etc.) to form an oil-containing powder, which is mixed with the powder of various raw materials of powdery soup to obtain the objective powdery soup. |
