发明名称 PREPARATION OF CORN GLUTEN FOR FOOD PRODUCT
摘要 PURPOSE:Crude corn gluten is dispersed, treated with sodium hypochlorite, combined with ethanol and dried to produce corn gluten for food product showing good water retention and good texture without strange taste and odor. CONSTITUTION:Crude corn gluten, obtained by the protein separation in the wet- method corn starch production, is adjusted in the solid concentration to 5-30%, treated with sodium hypochlorite in an amount of 0.1-2.0%, based on the solid component, calculated as the effective chlorine atom and the pH is adjusted to 3.0- 6.0 to remove the remaining irritant odor. Then, the resultant product is washed with water, combined with 1-10% ethanol on the solid basis, dried and, when necessary, crushed. Thus, the objective corn gluten for food product is obtained, which stands comparison with commercial abailable wheat protein or soybean protein in regard of taste and physical properties and is used as an ingredient for boiled fish paste.
