PURPOSE:To correct the variation in quality of fermented soybeans due to the temperature difference and make it possible to charge boiled soybeans inoculated with Bacillus natto even under a wind outlet, by using a heating means provided at the lower part in addition to a heating and cooling means at the top of a fermenting chamber. CONSTITUTION:A heating and cooling means 8 containing a heater 5, a cooler 6 and a fan 7 is hung from almost the center of a ceiling (4a) in a fermenting chamber 4 having a heat insulating structure. Plural grooves 10, 10 and 10 covered with latticed lids 9, 9 and 9 are provided on the floor surface (4b) of the fermenting chamber 4. Plural heating sheets 11, 11 and 11 are placed in the inner bottoms of the grooves 10, 10 and 10. Thus, the lower part of the fermenting chamber 4 is kept at a necessary and enough temperature even by reducing the rotatory power of the fan 7, i.e. wind velocity, extremely. |
