摘要 A process whereby trans-2-nonenal or its hydroxy derivative is added to coffee, or coffee extract or concentrate to enhance the desirable woody flavour of the subsequent infusion. The mixture may be comprised of a base of cereal, gum or starch with 7.5 x 10-10-1.2 x 10-6 by wt. of additive. A secondary additive, pref. 2-methoxy-3-isobutyl-pyrazine improves the buttery and wine taste of the coffee.
