A draught-cooled broiler unit comprises an outer casing 11, a burner box 14 mounted in box 11 with its bottom 16 spaced above bottom 15 of box 11 thus forming an air space 17, an electrical resistance heating element 20, a grill 23 horizontally disposed above and close to heating element 20, a fume exhaust system 25 which includes an intake 27, plenum chamber 28, fan 30, and a jar 38 which collects grease running from the sloping bottom 16 of box 14. In operation air is drawn through intake 27 thus carrying away smoke and grease laden vapours produced in cooking. In order to maintain the temperature of box 11 and box 4 within a range which enables broiler 10 to be installed in a counter top without creating a fire hazard and which reduces the possibility of a flash fire occurring from grease ignition an elongated slot 40 opening into space 17 and a second slot 43 are provided and optionally a slot 39. Under activation of fan 30 air is drawn through grill 23, slot 40 and intake 27 and out of slots 39 and 43 through the fan and out of exhaust 31 (see Fig. 2). The grill 23 may be optionally replaced by a solid hot plate (Fig. 5, not shown). Simulated charcoal briquettes of retractory type material may underlie heating element 20 to give a broiler unit closely resembling a charcoal barbecue unit (Fig. 4, not shown).</p> |
