Wine making vessel with header tank for recycling must - uses vacuum pump to pull most into tank from vessel base

Must is drawn from the vessel by a vacuum pressure in the header tank. The passage through which the must is returned to the vessel is fitted with an externally actuated stop valve. The installation pref. comprises a vacuum pump piped to the header tank via a non-return valve. The non-return valve remains closed until the vacuum pump suction has closed a diaphragm valve venting the tank to atmos. The installation is used for recycling must through floating marc in the wine making process. This is good practice to ensure high quality wine. The must is raised from the vessel to the header tank by suction pressure only and without being pumped. Pumping subjects the must to pressures which can harm the quality of the wine.
