PURPOSE:To prepare a readily soluble granular food, by mixing a powder of an orgainc acid and powder of a carbonate or bicarbonate with a powdered food, and granulating the resultant mixture. CONSTITUTION:A powder of an organic acid, e.g. citric acid, malic acid or tartaric acid, and a carbonate or bicarbonate powder of sodium, potassium or ammonium are mixed with a powdered food, e.g. instant coffee, cocoa, milk powder or soup, and the resultant mixture is then granulated by the dry granulating method. Either one of the acid or bicarbonate is coated with a moisture-proof coating material, e.g. an oil or fat, to prevent the reaction during the storage and not to damage the taste of the food though the total amount of the organic acid and (bi)carbonate added is 0.5-5%. |
