PURPOSE:To prepare a solid pulplike food, by dissolving an aqueous solution of a stabilizer in a fruit juice, freezing the mixture destroying the jelly structure, and thawing the resultant frozen juice. CONSTITUTION:A stabilizer, e.g. carrageenan, locust bean gum or phosphate, and an additive, e.g. a sweetening agent, are dissolved in water, and the resultant solution is then heat sterilized. The pH of the solution is ajusted and the fruit juice is added therto and cooled. The cooled solution mixture is then filled into a container 1, frozen in a freezing room at -10 deg.C within 6hr to a freezing point. The mixture is then frozen completely within 5hr thereafter to destroy the jelly structure by the deposition of coarse ice crystals and form a network structure containing cracks 2 therein. The frozen mixture is then thawed to give the aimed product (A). |
