PURPOSE:To prepare ''tofu'' (bean curd) not causing the deterioration of taste due to water cooling, by feeding separately a mixture of soybean milk and a coagulant into subdivided containers, and coagulating them while heat is kept in a lagging container. CONSTITUTION:The lagging container 1 is made of a thermally insulating material, e.g., foamed polystyrene, and consists of the outer container 2 having the hollows 4, and 5 capable of putting the subdivided containers 3. A coagulant is added to soybean milk (about at 80 deg.C) obtained conventionally from soybeans, the soybean milk is fed to the subdivided containers 3 separately, the containers 3 are put in the lagging container 2, and the soybean milk is coagulated in thermally insulated state. |
