PURPOSE:To protect Lactobacillus bifidus from oxygen, by coating Lactobacillus bifidus with oil or fat which is fluid at about >=35 deg.C and solid at about <=30 deg.C. CONSTITUTION:Cells of Lactobacillus bifidus are coated with oil or fat which is fluid at about >=35 deg.C and almost solidifies at about <=30 deg.C, by heating the oil or fat at >=50 deg.C, cooling the liquefied oil or fat slowly to about <=50 deg.C, and mixing with the cells. The mixture is cooled below the solidification temperature of the oil or fat to obtain the objective oil or fat containing Lactobacillus bifidus. The oil or fat containing Lactobacillus bifidus can be used widely for the food containing oil or fat, especially for the cake cream used for the preparation of biscuit sandwich, etc. |
