PURPOSE:To prepare powder of tea extract capable of instantaneously reproducing the taste and flavor of ''chanoyu'' (dispersion of ground green tea served at the tea ceremony), by immersing tea leaves in an aqueous solution containing cyclodextrin to extract the soluble components, and drying the extracted liquid. CONSTITUTION:Tea leaves such as green tea leaves, etc. are immersed in an aqueous solution containing cyclodextrine. The extraction is carried out at a temperature lower than the normal extraction water temperature. The extracted liquid is heated at the normal extracting temperature of tea leaves with a heat-exchanger, etc., for a short time, and cooled. The ill odor and taste caused by the low temperature extraction, e.g. greenish smell, etc. can be eliminated by this treatment. The extracted liquid is dried by spray-drying, etc. at a temperature as low as possible. |
