PURPOSE:To prepare a fully expanded product, having good sense of eating, and containing a livestock meat, by mixing the livestock meat with water and starch in a given proportion, adjusting the pH, and expanding the resultant mixture. CONSTITUTION:35-50wt% Livestock meat with a fat content of 30% or less is mixed with 30-35wt% water and 15-30wt% starch. The pH of the resultant mixture is then adjusted to 6.0-6.7, and the adjusted mixture is finely cut and kneaded by a silent cutter, etc. The mixture may be heated during the finely cutting and kneading. Unless simultaneously heated, the kneaded material may be stuffed in casings and hot-molded. The heated material is then cut to a given thickness or allowed to cool and then cut to the given thickness. The cut material is further dried by the through flow drying or directly without through flow drying, fried in oil or roasted and expanded. |
