PURPOSE:Broiled eels are soaked in the sauce to create a new type of taste, thus producing tasty food with well-balanced smell and taste, although it is a little different from usual broiled eels in the appearance and taste. CONSTITUTION:Broiled eels are prepared by the usual method and placed in a refrigerator until it is frozen only at the surface, then skewers are removed. The resultant eels are directly, or after cut into an appropriate size, placed in a vessel and a sauce that is made by the usual method is poured into the vessel. Then, the eels is pressed with an inner lid at room temperature for 3-4 days in summer or for 5-6 days in winter. |
