PURPOSE:To dye fruit globules, e.g. cherries, naturally, by immersing the fruit globules in hot water or a hot alkaline solution while pressing the globules to one another, dissolving the paraffin layer on the parts other than the pressed parts, dyeing the fruit globules, and blanching the dyed globules. CONSTITUTION:Preheated fruit globules 1, e.g. cherries, are packed in a container 2 with many holes (2a) perforated thereon. A lid 3 is then closed to apply a pressure (P) to press the fruit globules to one another. The fruit globules 1 in this state are inserted in a container 5 filled with hot water or an alkaline solution 4 to dissolve the paraffin on the surface partly. In case the hot water is used, the globules 1 are immersed at 75-80 deg.C for 10min. In the case of the hot alkaline solution, the globules 1 are immersed in the 1-3% hot alkaline solution at 85-90 deg.C for 30sec-20min. The fruit globules 1 are then washed with water, dyed, by the conventional method and blanched. |
