PURPOSE:To prepare a proteinous nutrient material free from disagreeable taste, by treating a proteinous raw material with enzyme under a pH value controlled with citric acid, and neutralizing the product with an alkali which produces an insoluble salt by reacting with citric acid. CONSTITUTION:A proteinous raw material such as egg white is hydrolyzed with acidic protease in an aqueous solution acidified with citric acid, to obtain a nutrient raw material composed mainly of di- and tri-peptides. Afrer the completion of the reaction, the product is neutralized with an alkali which produces precipitate by reacting with citric acid, e.g. calcium hydroxide, etc., and the precipitate is removed by centrifugal separation, etc. The supernatant liquid is used as a nutrient raw material without further treatment or after pulverization by freeze-drying. |
