Viable cells of Bifidobacterium contained foods were prepd. by mixing sucrose and sorbitol into a milk-based medium for the microbe. Thus, B. bifidum YIT-4002 was cultured at 37≦̸C for 20hr on a skim milk product under aerobic conditions and the product was mixed with sucrose, sorbitol and water and homogenized to prep. a fermented food contg. 2.0X 109 cells/ml.
