PURPOSE:Boiled soybeans are mixed with a solution containing cut pieces of sea- tangle weed, soysauce, ''shochu'' (distilled Japanese sake) and sugar to produce the objective soybean pickles in a seasoned solution of good taste and storalability for a long time. CONSTITUTION:Soybeans are dipped in water, heated, drained and mixed with cut pieces of sea-tangle weed, then they are charged in a vessel such as a pot. Separately, a mixture of soysauce, ''shochu'', sugar and hot water is heated to prepare the pickle solution. The hot pickle solution is poured onto the hot boiled soybeans and they are placed in a vessel, cooled and stored in a dark and cool place with the lid put on it. |
