PURPOSE:To prepare a clear juice and a paste simultaneously and efficiently, by treating a crushed fruit or vegetable with an enzyme capable of destroying the plant tissue, and ultrafiltering the treated substance. CONSTITUTION:A crushed fruit or vegetable, e.g. a peach, strawberry, ''ume'' or carrot, is treated with an enzyme capable of destroying plant tissue, e.g. pectinase, injected from a hopper (A) in an enzyme treating tank (B) at 20-30 deg.C for 0.5- 1.0hr. The resultant substance is then ultrafiltered through an ultrafiltering apparatus (F). For recovering the enzyme, an ultrafilter (F-1) permeable to the enzyme and an ultrafilter (F-2) impermeable to the enzyme are used in two stages. The resultant enzymic solution (H) is reused. The resultant ultrafiltrate (G) is used as a raw material for a juice, and the resultant concentrate (E-1) is used as a raw material for a paste. The treated substance is then strained through a finisher (C) if necessary. In case the enzyme is not recovered, the enzyme may be inactivated by heating and then ultrafiltered in one stage. |
