PURPOSE:To permeate a seasoning solution into a spongelike food with certainty, by utilizing the deaerating action to remove air from the food. CONSTITUTION:A spongelike food, e.g. fried bean curd, dried bean curd or ''ganmodoki'' (fried bean curd mixed with bits of vegetables and tiny pieces of seaweed), is wholly immersed in a seasoning solution in a vacuum container, and the vacuum container is sealed up to suck the gas from the container, reduce the pressure of the container, remove air bubbles from the spongelike food and permeate the seasoning solution into the fine pores of the food. The spongelike food fully impregnated with the seasoning solution and a small amount of a seasoning solution are filled into a heat-resistant synthetic resin container and vacuum-packaged. The vacuum-packaged container is then heated to sterilize and season the spongelike food. |
