PURPOSE:To prepare a low fat fish meal, by boiling a fish, separating a solid material from a liquid material, adding a microorganism belonging to the genus Eurotium, and having the ability to assimilate fats greater than the ability to hydrolyze proteins, and fermenting the resultant solid material. CONSTITUTION:A raw fish is boiled in a cooker, and a solid material is separated from a liquid material, crushed and pulverized to give a moisture content of 20- 60wt%. The resultant pulverized solid material is then introduced into a fermenting container, and a microorganism belonging to the genus Eurotium, e.g. Eurotium chevalieri, is inoculated into the solid material. The resultant inoculated solid material is then fermented at 15-18 deg.C for 10-12 days or at 24-25 deg.C for 2-3 days to give a fat content as low as 2.0-4.0%. |
