摘要 PURPOSE:Vinegar and soysauce are used as the major components of the seasoning and other flavors of various kinds are added thereto to lower the sourness of the vinegar, develop mellow taste and increase the nutritions. CONSTITUTION:Vinegar and soysauce are mixed at a ratio of about 50% to 30% and stirred for several minutes. Then, 10% of sugar and 10% of ''mirin'' (Japanese sweetened sake) are added to the mixture and they are stirred until the mixture turns the color into pale brown. Then, a chemical flavor is sprinkled to the seasoning.
