<p>Bakery proving chamber comprises a multi-trolley capacity chamber in which the atmos. is conditioned by circulation of air through a service duct equipped with refrigeration, heating and air circulation systems. A eutectic soln. module stabilises the low temp. required for the fermentation delay period and an automatic electric valve lets in atmos. air for rapid warmup to restart fermentation. Shutters are also provided to control the amt. of flow of recycled air, enabling the humidity of the chamber to be maintained at the required level. Pref. the eutectic module comprises a tank contg. a soln. of mineral salts and a cooling coil branched from the refrigeration system. The chamber is for fermenting or delaying fermentation of bread dough pieces to suit prodn. requirements. The temp. is held at not more than +2 deg. during the delay. This is prejudiced for the first trolley load as the second trolley load enters the chamber etc.</p> |
