Large blocks of frozen food (planks of frozen fish) are processed intermittently to smaller units (fish fingers) in multi-blade cutting presses. At the start of every stroke of the press, the preceding batch of smaller units is separated from the next large block by an air cushion. The press plunger face is fitted for this purpose with shallow slits to suit the cutter blade pattern so that the smaller units are advanced a little deeper before the next large block arrives. This prevents the fish fingers from adhering to the next block which used to cause an excessive mount of breakage of the fish fingers in irregular lengths, and therefore wastage. |
