PURPOSE:To prepare high-quality ''miso'', etc. automatically and continuously without admixture of foreign substances, by arranging containers for putting mixture feeds for ''miso'' on tracks for transferring them which are equipped between the both ends of a fermenting and ageing chambers, and ageing the feeds while the containers being sent successively. CONSTITUTION:For example, the ageing chamber 1 is kept about at 30 deg.C to carry out the first fermentation and the ageing chamber 2 is kept about at 15 deg.C to do the second fermentation and ageing. In the fermentation, when the slant tracks 3a and 3b are equipped from one end to the other of each of the individual ageing chambers 1 and 2, and the containers 4 are arranged successively on the slant tracks 3a and 3b, the individual containers 4 are moved one end to the other of each of the chambers by their own weight. For example, preferably the containers 4 are made into a miniaturized structure with a mixture feed about 1.5-0.7ton and transferred continuously. During the transportation, the feed is fermented properly. After the containers are passed through one ageing chamber, the mixture feeds in the containers 4 are fermented uniformly because of small sizes of the containers. |
