摘要 <p>PURPOSE: To provide both a method for preparing Koji for producing Sake (rice wine) mainly useful for brewing refined Sake and an apparatus. CONSTITUTION: In an automatic Koji preparing apparatus provided with rotary discs at one or plural stages in a chamber consisting of heat insulating walls 1, a Koji is piled by making the piled thickness of a Koji piled layer and the shape of an outer periphery constant even in case of a different used amount of a Koji substrate. When a measured Koji temperature or a Koji preparing time reaches a fixed Koji temperature or a fixed Koji preparing time, the piled thickness and the outer peripheral shape of the Koji substrate are regulated and/or the surface area and the outer peripheral shape of the Koji substrate are controlled to provide the objective method for preparing a Koji for producing Sake comprising a bed process and a shelf process. This apparatus for preparing a Koji for producing Sake is equipped with screw devices 6a, 6b and 6c for arbitrarily controlling piled thickness of the Koji substrate and Koji near bringing plates 7a, 7b and 7c for regulating the outer peripheral shape and/or a channel forming device for controlling the surface area of the Koji piled layer, piles a Koji by making the piled thickness and the outer peripheral shape of the Koji substrate constant even in case of a different used amount of the Koji substrate. When a measured Koji temperature or a Koji preparing time reaches a fixed Koji temperature or a fixed Koji preparing time, the piled thickness and the outer peripheral shape of the Koji substrate are controlled and/or the surface area and the outer peripheral shape of the Koji piled layer is regulated.</p>
