PURPOSE:To prepare a soft food of delicate flavor suitable for a relish taken with ''sake'', having taste of fish, by preserving the milt of salmon in a seasoning consisting essentially of ''miso'', followed by drying. CONSTITUTION:The milt of salmon is preserved in salt for about a month, and boiled for also removing salt. The prepared food is dried naturally for about a week to make it in 80% dried state. It is then packed with a cloth, e.g., bleached cotton, etc., preserved in a seasoning consisting essentially of ''miso'', e.g., ''miso'' containing ''sake'' lees for about two months, and is dried in such a degree that the surface is dried. |
