摘要 <p>PURPOSE:A freshness keeper that generates carbon dioxide is contained together with vegetables or fruits in a packing vessel to keep their freshness or to remove astringency as well during the distribution. CONSTITUTION:A freshness keeper that consists of an organic acid with a melting point of higher than 60 deg.C, 2 or more carboxyls in the structure and a dissociation degree of 1.0X10<-5>-6X10<-2> such as dl-malic acid and of a bicarbonate salt such as sodium bicarbonate, as major ingredients, and other additives such as activated carbon or zeolite is contained together with vegetables or fruits in a veseel made of corrugated carboard or plastic film, thus lowering the oxygen concentration in the vessel and keeping their freshness with the carbon dioxide generated from the freshness deeper, further effecting the removal of astringency, when persimmons are packed, as well.</p>
