PURPOSE:To easily prepare a fish meat paste product having high added value and unique shape, by forming fish meat paste into a lump of a prescribed size, gelling only the surface part of the lump and forming to a prescribed form. CONSTITUTION:Fish meat paste is formed to a prescribed size, e.g. a nearly spherical lump of about 10-100mm in diameter and only the surface part of the lump is gelled by arbitrary heating treatment. A part of the lump is pressed from outside, e.g. by pinching with fingers to deform the lump into a prescribed shape. The deformed lump is heated as it is to effect complete gelling of the meat. |
