PURPOSE:To prepare a boiled noodle having a quality retained at a given level or above and stable storability, by treating a boiled noodle containing an edible carboxylic acid with a solution containing a salt of sorbic aicd or/and the sorbic acid. CONSTITUTION:A boiled noodle containing 30mg equivalents or less, preferably 20mg equivalents or less, based on 1kg boiled noodle, edible carboxylic acid, e.g. lactic, glutamic or caproic acid, is treated with a solution containing a salt of sorbic acid or/and the sorbic acid in a concentration of about 0.05-1% as the sorbic acid by the spraying, dipping or coating method. |
