A method of improving the packaging of IQF grated cheese is disclosed. An apparatus for carrying this method comprises means 10 for delivering frozen grated cheese 13 to at least one container 11, 12 having a weight sensor. A means 14 is for discharging frozen grated cheese from container 11, 12 when a predetermined weight of frozen cheese is present in the container. Means 17 is for forming a mist of water through which the discharged cheese will pass en route to packaging means 15 and means 30 is for controlling the volume of water forming the mist in proportion to the weight of discharged cheese such that a layer of ice forms instantly on each particle of cheese on contact with the water. The layer of ice is between 1% and 5 % of the weight of the particle.
